Ever cleaned out your fridge and found forgotten, moldy leftovers that you worked so hard to cook in the first place? Do you get tired of eating the same leftovers every day until the thought of eating them again makes you nauseous? This one is for you! I’ve been working on weekly meal plans with recipes that can be transformed throughout the week to eliminate wasted food while still having a variety of dinners throughout the week.
You’ll probably notice that my meal plans usually only include three dinners each week. That’s intentional! The idea is to rely on leftovers, takeout, or whatever feels doable on the other nights. Let’s be real, we’re busy people, and cooking a full meal every single night just isn’t realistic. So if you catch me eating cereal for dinner now and then when we’re too tired to cook… don’t judge. (And don’t act like you’ve never done it!)
Meal Plan #1: Pot Roast, Beef Stroganoff, Lemon Pepper Chicken
Meal Plan #2: Chicken Alfredo, Salisbury Steak, and Chicken Pot Pie
Meal Plan #3 Chicken Quesadillas, Fiesta Potato Taco Bowls, Baked Chicken Tetrazzini
