This one’s a classic comfort meal that feels like a hug on a plate.

  • For the green beans, I keep it simple and use canned — but to add flavor, I simmer them with a couple strips of bacon and a beef bouillon cube. It takes almost no effort but tastes like you tried way harder.
  • The gravy comes straight from the pot roast juices (yum), but you can absolutely make extra if you need more. I’ll be real with you — I usually just use brown gravy packets because they’re quick, easy, and honestly we always seem to like them best!
  • If you don’t like green beans-peas, carrots, or Brussels sprouts would also go great with this!
  • The air fryer chicken can barely even be considered a recipe because it’s so easy. Just take your chicken and sprinkle it with lemon pepper seasoning (I just use the Great Value brand) and cook in the air fryer for about 15-20 minutes. You will get juicy chicken with a crispy skin. My mouth is watering just thinking about it.
  • Don’t have any mashed potatoes left over from Meal #1? No worries! Chances are, you’ve still got some extra potatoes hanging around (because let’s be real, it’s impossible to buy the exact right amount for a small household). Use those extras to make some roasted or baked potatoes, either one pairs perfectly with this meal!
