My boyfriend officially declared these “the only mashed potatoes I ever want again,” and honestly, that’s enough for me.
Ingredients:
- 2 lbs Yukon Gold potatoes – don’t even think about using another variety. Yukon gold is the secret weapon here!
- 4 oz cream cheese
- ½ stick butter
- ½ cup milk – whole milk is ideal, but 2% will work in a pinch
- Salt and pepper, to taste
Instructions:
- Peel and chop the potatoes into small cubes.
- Bring a large pot of water to a boil, then add the potatoes.
- Boil for 15–20 minutes, or until fork-tender.
- Drain and return the potatoes to the pot.
- Add the cream cheese, butter, milk, salt, and pepper.
- Mash with a potato masher until mostly smooth.
- Finish by whipping the potatoes with an electric mixer until they’re perfectly light and fluffy.
