The BEST Fluffy Mashed Potatoes

My boyfriend officially declared these “the only mashed potatoes I ever want again,” and honestly, that’s enough for me.

Ingredients:

  • 2 lbs Yukon Gold potatoes – don’t even think about using another variety. Yukon gold is the secret weapon here!
  • 4 oz cream cheese
  • ½ stick butter
  • ½ cup milk – whole milk is ideal, but 2% will work in a pinch
  • Salt and pepper, to taste

Instructions:

  1. Peel and chop the potatoes into small cubes.
  2. Bring a large pot of water to a boil, then add the potatoes.
  3. Boil for 15–20 minutes, or until fork-tender.
  4. Drain and return the potatoes to the pot.
  5. Add the cream cheese, butter, milk, salt, and pepper.
  6. Mash with a potato masher until mostly smooth.
  7. Finish by whipping the potatoes with an electric mixer until they’re perfectly light and fluffy.
