Copycat Chuy’s Salsa

We LOVE the fresh salsa at a certain chain Mexican restaurant, so of course I needed to figure out how to make it at home. This recipe is nearly identical, and is great as a side dish or snack. It is also a crowd-pleaser for parties! It is SO EASY to put together. Literally just throw everything into a food processor and blend.

Ingredients

1 lb Roma tomatoes, roughly chopped

1 small white onion, roughly chopped

1–2 Serrano peppers, seeded for mild or leave seeds for heat

2 tbsp juice from canned (pickled) jalapeños

2tbsp chopped jalapeño, can use fresh or pickled

2 cloves garlic

1/2 cup fresh cilantro (leaves and tender stems)

Juice of 1 lime (about 2 tablespoons)

1/2 teaspoon salt (or to taste)

1/2 teaspoon sugar (optional, helps balance acidity)

1/4 teaspoon cumin (optional, for extra depth)

Instructions:

Place all ingredients into a food processor or blender and blend until smooth but still slightly textured!
