Meal #1 Chicken Quesadillas with Salsa
I don’t have a separate recipe for the chicken quesadillas because you can hardly call this a recipe: Place about 1 tbsp butter in a pan, add your flour tortilla and top with shredded cheese and chicken. Fry on both sides until slightly browned and cheese is melted (keep on medium heat to prevent the outside from burning before the inside is warmed through). Serve with sour cream and salsa!
Meal #2 Fiesta Taco Bowls
This meal is a new favorite in our house, and is super easy to put together. Just provide the ingredients for the bowl and top with whatever you like!
The base for this recipe uses Fiesta Potatoes, then top with browned taco meat (I used store-bought seasoning), shredded chicken, or whatever protein you prefer! Then add additional toppings such as queso, shredded cheese, guacamole, lettuce, tomato, and sour cream. Get creative!
For this week, I made queso to top the potatoes with using leftover salsa, Velveeta cheese, and cream cheese. Microwave about 1/2 cup Velveeta, 1/4 block cream cheese, and 1/2 cup salsa (give or take, adjust measurements with your heart).
Meal #3 Baked Chicken Tetrazzini with green beans
This recipe uses the rest of the Velveeta from the queso we made earlier in the week!
As you have probably noticed, green beans are a staple side in our house. Broccoli would go well with this too, but a certain someone in my home refuses to eat it. Add whatever vegetable will please your crowd!
